The RAMBHÁ palenque resides in Santa Catarina Minas, a small and remote town that is a renowned source of ultra-premium agave spirits, widely recognized as some of the finest in the world. Often using wild agave, RAMBHÁ’s agave spirit expressions are made in the ancestral method. No metal is used in the processing, distillation or fermentation of the agave. Instead, the agave is crushed using a canoa made of volcanic rock and wooden mallets, with the latter regarded as the ultimate handcrafted and labor-intensive approach. The agave is then cooked in a conical oven, fermentation occurs in a pinewood vat, with distillation completed in clay pot. RAMBHÁ signifies the goddess of pleasure, and the singular pleasure of RAMBHÁ is the result Rosario’s precision artistry and tradition-bound craft.
Based on 2023 data compiled by Mezcalistas and certified by COMERCAM, ancestral mezcal made up only 0.35% of all certified mezcal production in Mexico. In contrast, artisanal mezcal accounted for about 93.7%, while industrial mezcal comprised roughly 5.94%.
